The reason for the deliberately incorrect grammar is that they wanted the "Verde" to be predominant whenever someone thinks of them. And they wanted to avoid the generic "La" -- which, if they were to be completely correct, would come before "Cocina Verde." Basically, "La Cocina Verde" would have put them in alphabetic order with half the other Mexican restaurants in town! They wanted to be different, and they wanted to be "Verde." So...
