About
They met after college while living in downtown Chicago, but their roots are in the northwest suburbs: Crystal Lake and Algonquin, where square-cut pizza was just part of growing up. After moving to Oregon, they brought that love for Chicago tavern-style pizza and Midwestern food with them. What started as a food trailer three years ago has grown into PROOF, a Midwest-inspired restaurant built around good food, cold drinks, Chicago sports, and a place that feels easy to settle into. Along the way, their dog West (GSP/Lab Mix) was part of the ride, and now Olive, their field golden retriever, is too.
