Their shop runs by Wendell Berry’s line: “eat these good beasts that eat what you can’t eat.” Everything they do revolves around butchery, fermentation, and fire. They offer butchery classes, woodfired catering, and they’ve turned the shop into a full-on salumeria where they make their own salamis, bacon, pancetta, and a bunch of other rad stuff. Every 2nd Friday they turn the place into a laid-back wine bar with grilled meats. They’re open Wednesday through Friday right now (hoping to add more days soon).
