Their mission was to open a high quality bakery and seasonal cafe in their own neighborhood - NE Portland's Hollywood district. The cafe is located in the historic Hollywood District Library building - a perfect place to relax, meet with friends and enjoy their hospitality and flair. The Cafe offers breakfast, soups, salads, and sandwiches featuring house baked Fleur de Lis breads and often-organic produce. Their bakery counter has Pain au levain, authentic baguettes, ciabatta, croissant, palmier, small tarts, muffins, scones and much, more - all baked daily. Greg Mistell Natural fermentation, Pre-ferments, poolish, lamination, and autolyse are all important parts of their baking methods.
