Natural wines are wines made without the use of chemicals, additives and overly technological procedures. This includes chemicals in the field, such as herbicides and pesticides, as well as any of the almost 200 allowed additives that are legally permitted in wine. It includes many technological manipulations of wine that they think erase the individuality of the product and the place it comes from. The grapes must be farmed organically and/or biodynamically, and the juice must be spontaneously fermented without the use of additives or technological manipulations. Their definition of natural wine is very simple: natural wine is made of grape juice and little else.
